No eggs in the office. Seems I may have to buy my own.

Seems my google issues are solved. Just needed the crawler to pick me up I guess.

Raisins and spice and everything nice
I've wanted to try the recipe without the cocoa. In place I'll add nutmeg and cinammon.Replace the chocolate chips with Raisins and its a spice cake.
Maybe.
I'm worried that cocoa is hydrophilic (is that the right word?) and as a result the cake will be too loose and wet. The raisins should help with that
Hopefully I can get an egg...

Hmm Google?
The top google add seems to be weird to me. The other ones on the page seem related (cakes, recipes, etc...) but that top one seems pretty random. An add for face cream, vacations etc... Not that this cake recipe wouldn't make a good face cream (I suppose :) ) or that eating one isn't a vacation in the middle of the day. But still it seems like the search on that first ad is missing that this blog is about cake making. Specifically cake making in a microwave in a mug.

Instructions
Ok super vague instructions in the last post...
1. Put 4-5 TBSP of spreadable cream cheese in mug.
2. Melt in microwave for 1 minute or so
3. Add everything else (no egg, 1 less TBSP of oil, no chips)
4. Cook in microwave (I tried 2:30 seemed fine)

This is a robust recipe...
Ok still no eggs (they were all eaten before I got one).
But I did the following:
replaced egg and 1 tbsp of oil with roughly 5 Tbsp of spreadable cream cheese
Almost forgot the sugar and had to eyeball it.
Still turned out.
Rise was pretty pathetic but still a cake (not a disk)
I think there is a direction of investigation on this cream cheese line.

Less oil...
Cut the oil back in the egg substitution back by a whole table spoon.
Rise was even worse but it is less oily.

Lesson of the day.
Ok so flour is a bit messy to be messuring in your office.
Maybe if I get one of those flexible cutting boards clean up will be easier.

So Far...
So far I've made several cakes:
1. The basic recipe (without chocolate chips which I didn't have) is pretty good. Because you are cooking in the microwave it doesn't brown. Wasn't the best cake I've ever had but is CERTAINLY wasn't the worst. Cake came out of the mug pretty cleanly.
2. Substituting the oil and water for the egg and omitting ALL optional ingredents still worked out. The cake didn't rise as well (but it did still rise). The cake stuck more then the basic recipe and I thought it was a bit oily. Maybe a little less oil...
